Hey Red! It’s Valentine’s Day.
Recently, I found a fun recipe on Pinterest – No-Bake Nutella Cheesecakes. I knew I HAD to play around with it and did just that this past weekend. Now what we have are no-bake, Nutella and Kahlua Cheesecake Mini Mousse Cups.
Whew, that’s a mouthful.
A delicious mouthful.
When I said something about it on Facebook/Twitter, so many people responded that I knew I would be remiss if I didn’t share it on Valentine’s Day.
Pick up the ingredients on your lunch break, whip it up and pop it in the fridge when you get home and a decadent dessert will be ready and waiting for you after dinner.
Nutella & Kahlua Cheesecake Mini Mousse Cups
adapted from My Baking Addiction
Ingredients:
- 12 Cinnamon Snap Cookies, crushed
- 3 tablespoons unsalted butter or coconut oil, melted
- 1 (8 ounce) package cream cheese, softened
- 2/3 cup Nutella
- 1 teaspoon pure vanilla extract
- 4 ounces heavy whipping cream
- powdered sugar, to taste
- Kahlua, to taste
Directions:
- Line muffin tin with paper. (I used 6 regular and 6 mini muffin tins.) In bowl, stir together cookie crumbs and melted butter or coconut oil. Evenly divide the crumbs between tins and press flat.
- In a large bowl, beat the cream cheese, Nutella and vanilla until smooth.
- In a second bowl, pour heavy whipping cream, kahlua and powdered sugar. Whip until stiff peaks form. (Note – if you add too much Kahlua, it won’t beat up. Add more cream and/or sugar.)
- Using a rubber spatula, fold in the whipped topping into the Nutella mixture until well blended and no streaks remain.
- Evenly pipe or spoon filling into muffin tins. (Easy piping tip – spoon filling into Ziplock bag and snip some of the corner off.)
- Refrigerate for at least 2 hours before serving.
